Just 5 ingredients makes this delicious dessert bar that travels well too if you want to take them along during the day.
Prep Time: 10 minutes
Servings: 15 snack size bars
Ingredients:
1 c pitted dates (it’s best to buy Medjool dates with pits and remove pits before using)
1 T almond butter
1 c almonds – raw or roasted but not salted
1 c golden raisins
1 T hulled hemp seeds
Directions:
Line an 8” X 8” pan with parchment paper and set aside.
Process the almonds in a food processor until most are finely chopped. There may be some larger pieces of almonds left in the processor bowl. This is ok and adds texture to the bars.
Remove the chopped almonds from the food processor and place in a separate bowl.
Place the dates in the food processor and process until their consistency is like a paste.
Add the raisins, hemp and almond butter and process again until the mixture blends together.
Remove the mixture from the processor and place in the bowl with almonds.
Mix all ingredients together. It will be sticky and thick.
When ingredients are well mixed, place it in the lined pan. Smooth out with your hand or a wide back spoon.
Chill for at least an hour.
Note: this recipe will keep in the refrigerator for several days. The flavors blend even better when kept in the refrigerator for at least a day. Also, if you prefer a thicker bar double the recipe and use the same size pan.
