“Clean Eating” and a Plant Based Diet

This course explores the details of how our diet has changed over the last 100 years and the resulting implications to our health, exactly what a healthy plant based diet is, why there is so much interest today and its proven effectiveness in preventing and reversing disease.
Additionally, we will explore how to avoid the “marketing trap” at the grocery store by choosing foods that are truly plant based with tips on how to get started.
Recipes and informational handouts will be provided.
A healthy plant based diet is defined as one consisting of whole, plant-based fruits, vegetables, legumes and whole grains. It eliminates meats, dairy products, and eggs as well as all refined and processed foods.
Long term and significant research definitively concludes that prevention and reversal of the chronic diseases we are plagued with (heart disease, diabetes, hypertension to mention a few) is best achieved with a plant-based diet, many times leading to reduction or elimination of medications.
