Two ripe (not overly ripe) bananas
Two ripe avocados – should be ripe enough to be soft to the touch and maybe a little dark in color on the outside
6- 8 Tablespoons of raw cacao – if difficult to find use the best organic ground cocoa that you can find
1 Teaspoon vanilla or scrape the inside of one vanilla bean
1 Teaspoon of cinnamon – optional
Process the avocados and banana in a food processor until smooth. You may need to stop once in a while to scrape down the mixture once or twice while processing.
Add the vanilla and cinnamon (if using) and process until blended.
Refrigerate for at least two hours to allow it to set up before serving.
If using for dinner guests (or is you just want to spoil yourself or a friend) serve it up in elegant presentation by putting it in pretty glass dishes and top with a sprig of mint for garnish.
