This high protein snack is a welcomed treat and very easy to make.

Ingredients:
I cup of Medjool dates with pits (see additional notes below)
3/4 c. hulled hemp seeds
1 T chia seeds
2 T Cocoa Powder
1/2 C. Raw Cocoa Nibs
3 T Hazelnut milk
1/2 t. Fiori Di Sicilia (more about this later)
3/4 c toasted walnuts
1/4 c. almonds
Remove the pits from the dates. I recommend that you start with dates with pits because they are always fresher than pitted dates.
Process the dates in a food processor or VitaMix until they are welll chopped and blended.
Add all ingredients except the hazelnut milk and blend.
Add the hazelnut milk at the end. You may need more or less milk depending on the consistency you want and you can adjust.
Remove the mixture from the food processor and press into an 8 X 8 ” pan that has been lined with parchment paper.
Press the mixture eithe over the entire bottom of the pan or over 1/2 the bottom of the pan depending on how thick you like them.
Put in the freezer for at least an hour. Remove from the pan and cut into squares. Store in the refrigetator or freezer.
Special note about the flavoring. Fiori di Sicilia is a unique flavoring from Sicily. It’s made from flowers and citrus – what a surprise given it’s name. I don’t see it in stores but it can be ordered from, of all places, King Arthur Flour. Enjoy!
