A wonderfully elegant desert – rich walnut and chocolate flavor topped off with fresh raspberries.
Preparation Time: 15 minutes to prepare, 2 hrs. to chill
Flourless Chocolate Cake
A lovely rich tasting desert made without diary or oil
1 ½ cups of raw walnuts
8 pitted dates
¼ cup raw cacao powder
½ tsp. vanilla extract
2 tsp. water
Fresh raspberries or other fruit for garnish
Place walnuts in a food processor and process until finely ground, add dates, cacao powder and vanilla and process until mixture begins to stick together. Add the water and process briefly. You may or may not use the entire 2 tsp. of water. Add just enough until the mixture sticks together but doesn’t become too sticky. Transfer onto a serving plate and form into a round cake or several smaller bite sized cakes. Chill for approximately 2 hours and decorate with fresh berries. I cut fresh raspberries in halves so they would lay flat on the cake.
Take the cake out of the refrigerator one hour before serving.
