1/2 cup raw almonds
1/2 cup raw cashews
1 1/3 cups pitted dates
1/2 cup dried, unsweetened coconut
½ tsp vanilla
2-3 Tbsp. raw cacao nibs (you can also use chocolate chips)
½ cup dried unsweetened cherries or raisins if dried cherries are not available. Dried cranberries also work well but remember they are probably sugar sweetened.
Process the almonds and cashews in a food processor or high speed blender until they are finely chopped. Then add the remaining ingredients in the food processor and process until smooth and “pasty”. The mixture will be sticky. Roll the mixture into small balls or press into an 8 X 8” pan and cut into bars. These keep for several days in the refrigerator. Enjoy!
