Oven Roasted Figs and Pine Nuts

Figs are low in calories. However, they contain health benefiting soluble dietary fiber, minerals, vitamins, and pigment anti-oxidants that contribute immensely towards optimum health and wellness. Use them in salads, as a dessert, or just slice and enjoy! They are in season now but won’t be around too much longer.

Ingredients for one serving:

Four fresh figs

Port or Maderia wine to cover the bottom of the roasting pan

2 T. pine nuts

Sprinkle of date or brown sugar

Directions:

Preheat the oven at 350 degrees

Cut the stalks off the figs and cut a cross in the top about 1/3 of the way through.

Stand them in an oven-proof baking dish and pour enough wine over them and cover the bottom of the baking dish. You don’t need a lot of wine but enough to have basted the figs with wine and to lightly cover the bottom of the pan.

Scatter the pine nuts over the figs and sprinkle with the sugar.

Bake in the pre-heated oven for about 20 minutes. Check on them occasionally to make sure they aren’t drying out in the oven and baste as needed.

These can be served as an elegant dessert at any dinner party and to really delight your guests you can add a dollop of vanilla gelato on the side!
