I’ve begun seeing fennel regularly in the produce departments of most grocery stores and I’m encouraged that it’s becoming more popular. If you are of Mediterranean background you are probably familiar with fennel, especially at holidays when it used to be most popular.

I’ll be using fennel in my upcoming cooking class this Saturday in a crisp fennel and apple salad. It will be fun to add this wonderful ingredient to our recipes. Fennel can also be grilled, roasted, added to relishes and used in a big variety of ways.
