Nutritional Benefits of Olive Oil: Tips to Unlock Its Full Potential
Finding good olive oil within the quality range in the store and knowing what to buy has been a hot topic for some time. I hear many of you have found this checklist of olive oil nutritional benefits to avoid the most common mistakes helpful.
Also, a large number of people reading this newsletter have joined the large community of Deliba Extra Virgin Olive Oil (EVOO) and have already received their shipments directly from the recent harvest in Italy.
Either way, once you’ve found high quality olive oil it’s now time to know how to store and use it to maintain the nutritional value (mainly polyphenols/antioxidants) to benefit your health.
Avoid Making These Mistakes
I. Avoid exposure to air
After opening your fresh bottle of EVOO, pour out what you need and close it up immediately. Long exposure to air will break down nutrient content through oxidation. Olive oil is not like wine that needs air to breathe.
II. Keep Your EVOO in its original dark glass bottle
Do not transfer the olive oil to a cute decanter, or worse, one that’s clear. EVOO is in dark glass for a reason – to ensure it’s not exposed to light. Light (especially 24/7 commercial lights in grocery stores) degrades nutrients while on the shelves.
III. Keep your EVOO in a cool dark place
Avoid storing olive oil in warm places such as above the oven or next to the stove. Heat degrades quality.
To summarize; Air, Heat and Light all affect your high quality EVOO. Don’t waste money by buying the good stuff and not knowing how to preserve its nutritional benefits.
