Classes at “The Academy” are a special time and I continue to be honored by the people that grace my door – always a wonderful group of amazing students. Our recipes yesterday included Moroccan style quinoa, fava bean salad, black bean and mango wraps, berry tart and almond and orange snacks – all naturally gluten free, sugar feee and whole unprocessed “real” foods.
As always, we came together at the end of class as a great community for an elegant lunch at “Villa D’Anca” and a toast to the chefs! This was the last class this summer as my efforts now turn to my cookbook and the harvest trip to Italy that I’m hosting. “The Academy” will re-open this fall.
