Almost everyone loves chocolate but chocolate desserts usually include loads of sugar and butter making them a highly processed and saturated fat food. This recipe not only avoids both processed and saturated fat but it delivers the benefit of good fat in the cacao nibs and antioxidants in the raw cacao.
Prep Time: 15 minutes
Servings: About a dozen (medium size)
Ingredients:
1 cup almond meal (can be made in your food processor by processing raw almonds or you can purchase almond meal wherever they sell Bob’s Red Mill Brand)
½ cup almond butter (label should list only almonds as ingredient)
¼ cup raw cacao
3 T grade B maple syrup
1 teaspoon organic vanilla
¼ cup raw almonds, ground
¼ cup raw cacao nibs, ground
Directions:
Combine all ingredients in a medium bowl.
Mix the ingredients together well. You will notice a smooth batter coming together.
Gently roll the batter into either bite sized or larger balls.
If preferred, and to “dress them up” finish by rolling into finely ground nuts, shredded coconut or raw cacao.
Note: using finely ground walnuts makes this recipe more costly but it does kick up the flavor and texture quite a bit.
