This quick and easy snack is fabulously unique in taste, stores well and is a great “go to” snack!
Prep Time: 10 minutes
Servings: Makes about a dozen large snacks or 36 bite sized
Ingredients:
½ c almond butter
3 T maple syrup (grade B if possible as it has the deepest flavor)
2 t orange extract
2 t ground cardamom
1 ½ cups almond flour (also called almond meal, can be purchased in the bulk aisle or Bob’s Red Mill brand)
½ c dried cranberries (sweetened with apple juice vs. sugar if possible)
Directions:
Combine the almond butter, maple syrup, orange extract and cardamom in a medium sized mixing bowl. Stir this all together vigorously until mixed well.
Add the almond flour and cranberries and continue to stir. You may have to stir for a couple of minutes until you see the “batter” mixing together well. Feel free to add a little more maple syrup if your batter is too dry or a little less almond flour the next time if you like this snack a little more moist.
When the mixture is workable, roll small pieces (about ½ teaspoonful) into a ball or flatten slightly.
Place on a metal baking sheet (ungreased and without parchment paper) and chill in the refrigerator for about an hour.
These may be eaten immediately or will keep for one or two days in a covered container in the refrigerator. They also store well in the freezer making them a quick available snack when needed.
